Golden Vegetable Soup

 

This soup is very easy to make and so delicious!  The coconut milk makes it creamy and combined with the tomato soup gives it a wonderful flavor.  If you aren’t worried about the soup being gluten-free you can always use regular pasta instead of the corn past, though I think the corn pasta tastes better in this soup.

  1. Bring vegetables, salt, and water to a boil in a large saucepan. Cover and simmer for 8 minutes. Add pasta and seasonings. Simmer for 10 more minutes. Add coconut milk and tomato soup. Stir until completely combined. Enjoy!
